A Scrumptious Weekend Treat

Who doesn't love to linger over a weekend morning? We do! Eggs Benedict with smoked salmon and homemade hollandaise sauce is how we made our last Sunday special. Try out our recipe!

Ingredients:  4 English muffins, 4eggs, 1 package Wild Alaska smoked salmon, hollandaise sauce (make your own or use our recipe below).

1. Make hollandaise sauce. For our recipe (serves 4), you need: 6 tablespoons clarified butter, 3 egg yolks, 2 teaspoons fresh lemon juice, 1.5 teaspoons hot pepper sauce, salt and pepper to taste. In a blender, blend the egg yolks, lemon juice and hot sauce until foamy and a little bit thickened. Heat the clarified butter just until it is liquid - you don't want it hot. With the blender on the lowest setting, very slowly add the butter. Season to taste with the salt and pepper and put somewhere warm until you are ready to use. Don't cook it!

2. Poach the eggs, toast the muffins, and flake the smoked salmon. Heat the smoked salmon either in a microwave, in a sauce pan on low heat, or in the oven on a cookie sheet.

3. To assemble, top the muffins with a poached egg, smoked salmon, and hollandaise sauce.
